Light, Comfortable, Holds An Edge... Perfect!
This is my second Shun Sora knife, also I got one last Christmas. I have made most of my family food at home for 40+ years, so I know what a difference a good, sharp knife brings to the chopping table (pun included). I had a decent brand of German stainless steel (X50CrMoV15) knifes, but I was constantly sharpening them and yes, I do sharpen with a high-quality whetstone.I was concerned about the handles at first, so it appeared to feel a little on the less expensive side and the next level of Shun was more than I wanted to pay, but this synthetic handle is more antimicrobial, so it’s better for sanitary care.If you use a hand sharpener it might scratch the sides of your blade. I keep mine on a magnetic strip in my kitchen that caused a few scratches, but I was able to buff them out. These keep an edge longer the any of my other knifes.

The perfect paring knife for the money
This is easily the best paring knife for the money. Hands down. Simple decision. This is my fourth Shun knife and by far the cheapest as I believe the average cost was about $129 with one double that. This was on sale for under $40.I have a number of paring knives and use them mostly for slicing and dicing smaller vegetables like peppers and potatoes. Lately my knifes had been tearing the skin of some veggies a bit and I assumed it was time to buy a new blade or two. I forgot what a truly sharp blade can do for my prep work. The easiest way to explain it is I don’t hear a thing as I slice potatoes and jalapeños and similar items. The knife just slides through. I can not recommend this enough.

Cheapest handle ever
The blade is lovely, which is why I gave it 2 stars instead of 1. However, the handle is the cheapest of cheap plastics. I mean, I can't even describe how cheap this handle feels. Wholly and utterly disappointing. I have 3 other Shun knives along with a myriad of other high carbon Japanese knives and German knives. This one is going back immediately.
