Is there a sheath for the 3.25 inch blade paring knife?

No. There is not a sheath for these however these knives are the GREATEST!!!! I LOVE them. Easy care easy clean and a great value. I actually had a couple of different knife sets that included small paring knives and I prefer this serrated one and also the straight blade knives.

Is this made of stainless steel or will it rust?

It’s stainless steel, I put it in the dishwasher, no rust at all. It’s a very sharp fabulous knife. I love it!!!

Is the blade sharpened on both side or only a bleed from one side?

It seems some people think you were asking if both edges were sharpened - no they're not. This knife only has one edge sharpened. This is a 'double beveled' knife, sharpened on both sides, making for a "V" shaped edge. Yes, you will bleed, easily, if you draw the sharpened edge across yourself. You will also bleed if you draw or push the non-sharpened edge across yourself, but you'll have to try hard. It will will be more painful, and do more damage.
