Q: What's the diameter outside of roller?

The specs say 4"x .6". I measured the exterior approx. 4"x 5/8". The metal is thin approx. .1cm thick.

Q: How long each form is? It is confusing because there are three dimentions in the description

I have the regular and the mini ones..... the mini ones are 4"L x .6W". Which means it is a little over 1/2 inch around and 4 inches long. You cut circles of dough 2-1/2 inches to wrap around them to form a cannoli. xo

Q: Do these float or sink in the oil when frying the shells?

I don't use a deep fryer so they do sit on the bottom of the pan. I do it this way, seam side down 1st, to prevent them from splitting open. Half way through I remove the form with tongs to complete frying.

Q: Can these forms be used at temperatures higher than for frying, such as in the oven with phyllo pastry?

In my opinion yes I would think so. I have had them in a deep fryer anyou would be fine.d with no problem so again I think
