Q: are pages perforated?

No. You can see in the photos. Also, when they say "paint panorama" across two pages, it generally means there are no perforations. I don't know of any "books" that have perforations, that usually comes with some "pads".

Q: Does each book really have 76 sheets/152 pages each? Or does one book come with 38 sheets/76 pages, 2 books totaling 76 sheets/152 pages?

The description says 76 pages which is correct. you get 37 loose sheets making 74 pages, there are 2 more sheets glued to the inside front and back covers giving you 2 more pages, but I don't count those as most people would leave those blanks.

Q: is the paper 100% cotton or cellulose?

I would guess that since they are not stating it boldly in the description, that this paper is not rag paper. The price also kind of gives that away. It does say that the paper is acid free so should hold up well in the long run. If you want a 100% rag paper sketch book, my suggestion would be to try making your own out of paper you trust. Hope that helps.

Q: How much texture does this paper have? I'm looking for something very fine, with a very subtle texture for gouache.

I don't know a lot about papers, but I'd say it's medium to low texture. Not super rough, not completely smooth.
