Q: Would this work with cheesecakes?

Yes! It works with all kinds of the desserts

Q: Can I put cake pops (upside down) on this stand? About how many do you think it would hold?

In answer to your question, you would have to make sure there is enough room between levels for the whole cake pop to fit. I don't know the answer to that or how many could fit between layers. I used mine for small cakes and had great results.

Q: Will I be able to take off the first 2 tiers and use the the 10 inch for a cake then cupcakes around on bottom and will the stick be sticking out?

We did exactly that for a wedding. The stick is actually in several sections and they are screwed together between each layer. This means that you can remove tiers AND sections of the stick so it doesn’t stick up.
