Q: Can I use this when I'm live streaming on Zoom?

It should work fine. Simple input/output.

Q: Are the main volume controls for each channel and the mains sliders or twist knobs?

I think the correct practical answer is: both. The main gain is a twist knob. Turn it all of the way down, and you have no sound; however, in most cases you would have the L-R push button turned on in which case the corresponding slider also is a gain control for that channel.

Q: If you don't plan to use the mixer with a computer, do you need to download any software? will it still work as a plug n play xlr mixer?

The mixer does not require a computer to use. The only thing you must have computer for is the digital interface - the usb port.
