Mylar bags are 100% BPA free and food safe. They are made from polyester resin. If they were harmful for food storage up to 20 to 25 years I am sure we would have known about it long before now. As for aluminum causing the health risks you mentioned I have never heard of these so know nothing about that. I have stored lots of food in them from my freeze dryer. Hope this helps.
