Can I use coconut milk/cream??

This is a great question! Bacteria in the yogurt culture feeds on lactose found in dairy milk only, which is vital to keeping the culture strong. That said, I've heard from customers that alternating dairy and nut milk also works. I'm not sure if this is something you'd want to try, but if you choose to experiment, I recommend keeping dairy starter as a backup.

I live on an island and only have uht milk available to me. will this work with uht milk?

This question can only be answered by the seller of the product. I can tell you in advance that they will want to know what "uht" milk is, before they can answer.

How many generations will this make (teaspoon saved from 1st batch to make 2nd batch; teaspoon from 2nd batch to make 3rd batch, etc)? Thank you.

This is an heiloom culture and it'll last forever as long as it's taken care of, which means you can make ending batches.

Instructions suggest covering the culture vessel. Does that mean that the culture is to be grown in anaerobic conditions?

We want to cover the jar to protect from cross contamination, but not tightly seal it as to create anaerobic environment. Plastic lids that come with yogurt makers work great. Plastic mason jar lids, triple coffee filter, a few layers of fine cheesecloth can work as well.
