Q: Does it drip? Does it need to be placed on a plate to protect tablecloth from drips?

I didn't notice a drip when I was pouring the gravy. However, I did place it on a silver tray and there was some residue on the tray.

Q: Could this be used for cold half and half?

Yes I’ve used for hot & cold items

Q: Can this be used for pouring heated syrup for pancakes as well?

Yes. I have poured boiling gravy into it and woks great. The only disadvantage is it can't be put in the dishwasher.

Q: can this easily pour thick/chunky gravy, or is it intended for a liquid texture gravy?

It will pour anything that flows, regardless of the thickness. You lift the lid when pouring, allowing it to shut after you're done pouring. Hope this helps!
