Oh my these are excellent. Have made them various ways and found that I prefer them a bit chewy as opposed to too tender. Very good and worth the price.

All of the Octopus in this latest order are much smaller and have a slight after-taste.
This latest order the Octopus are much smaller. Usually there are two 0.5lb to 0.6lb octopus in each of the 8 packages. With this latest order (2022-Nov-18) there are 3 or 4 much smaller Octopi in each package. I really don't mind that the Octopi are smaller cause the packages still weigh the same, but with these Octopi being smaller, the processor isn't getting all the hard rings out of the tentacle's suckers. I'm spitting sucker-rings with almost every bite. These smaller Octopi definitely have a very slight but strange after-taste that my family first noticed. I noticed it also. It sort of reminds me of kerosene or lamp-oil. The larger ones in all of my brother's previous orders didn't have an after-taste. My order arrived SuperFast and everything was still frozen with loads of dry-ice still in there. All Octopi are cleaned and de-slimed. My only complaint is too many sucker-rings in these much smaller ones and the very slight but strange aftertaste.

Excellent quality, but it’s all in the cooking…
If they don’t turn out great, the fault is in the cook. Unfortunately, there are many contradictory instructions on how to cook octopus. Keep in mind that these are cleaned, cooked, and frozen. They can be defrosted first, but my favorite way to cook them is to boil a lot of water with garlic and herbs, and dropping them in frozen. Then let them boil for 45 minutes, and drop the temp to simmer for another 30 minutes. Take them out and let them cook off. Tamp them dry with paper towels. Cut the heads off and the bodies in half. Add EVOO, a bit of wine vinegar, and ground pepper. Grill and char them, then serve. They can be served as is, or sliced and added to salads or whatever.
