Q: Is this meant to discolor? I cut some veggies and washed immediately after and now the knife has blue discoloring

Washed and dried? Maybe hard water of you didn't dry it. Contact Dalstrong directly not on Amazon they have excellent customer service.

No, it does not. It is a great product!

Thank you for your question. There is an uncoated area above the knife edge so that the coating won't be scratched off when time comes that the knife needs to be sharpened.
