Our Tapenades, made of excellent raw ingredients from Puglia, represent the ancient recipes of the Pugliese tradition. Immediately after harvesting the eggplants, black olives and artchokes we clean and wash them thoroughly. We then put them into vinegar and salt and centrifuge them. We dress the savory mixture with extra virgin olive oil and spices and pasteurize in a steam autoclave. Our Tapenade pairing is a useful pantry favorite as an accompaniment to appetizers, a tasty side dish for meat and poultry, and a spread to add exquisite flavor to sandwiches.
