I've seen this same product online for Â£70. However, this one is labelled 'premium'. What's the difference, please?

The Battleship Yamato has two kinds, "No.25" and "No.30".The labelled 'premium' is "No.25". "No.25" is a Flagship Model and the detailed structure which had not been reproduced until then was perfectly reproduced.Therefore the price was getting expensive.So "No.30" was renewed as a "plastic model of Battleship Yamato" which is affordable price."No.25" was launched in 04/12/2011."No.30" was launched in 30/03/2013.

Does the premium version include the deck sheets, metal gun parts and deck railings?

hello.Tamiya yamato kit nr 78025 is a very nice kit but wooden deck detail,metal gun barrels and photoetched railings are not included but some transparent windows and photoetched parts and wire and stanchion railings are inciuded.best regards Arve

does the model need to be glued together?

Yes it needs to be glued and to be painted among other things. This is not a die cast kit. If you are seeking for a die cast kit you may look at FORCES OF VALOR Kit No 86014, but in 1/700 scale.
