It is very important to season/prepare the bowl before you start to use it, see internet. Very good construction! Good for single batch. Very important to properly clean and store!

Excellent way to quickly cool sushi rice
This hangiri works so much more effectively than using a large wooden bowl like I used to. The large flat bottom allows the rice to spread evenly for faster and easier cooling while mixing in the sushi vinegar. And the wood absorbs a lot of excess liquid to keep the rice hydrated but not wet.This 13" size is good for 1 - 3 cups of uncooked rice easily. It could probably do 4 cups but at that point I would look at sizing up. That translates to a LOT of cooked rice, so this is a good size for making sushi for 2-8 people.The hangiri needs a bit of special care, but nothing that is too burdensome. Before first use it needs to be seasoned with water and a bit of rice vinegar. Then before each use it needs to be wetted to allow the wood to expand a bit but not waterlogged so it can still absorb some excess moisture from the rice. Cleaning is also pretty straightforward. The rice grains remove easily, but the excess starch that is left behind needs a gentle scrubbing with a nylon brush.Pair this with a wooden rice paddle to take your sushi rice game to the next level.

Seems authentic.
Used the tub for making my sushi with a little rice vinegar. Excellent at soaking up the moisture for some sticky rice. The band feels like copper- not plastic, but I didn't want to scratch it yet to check. Its a cool addition to my kitchen tools and I recommend it. Might be overpriced, but I wanted an authentic tub.
