Paleo Pancake and Waffle Mix by Birch Benders, Made with Coconut, Almond and Sweet Potato Flour, Just Add Water, 12 Ounce (Pack of 6)

It has been several years since I got rid of most discretionary consumption of wheat flour in my diet. I don't have many cravings for foods that I no longer eat, but occasionally I will see something that catches my attention. This pancake mix is one of those foods that caught my attention.Could I really eat pancakes again and not blow out my blood sugar levels? It turns out that the answer is yes. I stirred up my first batch of these pancakes and let the batter sit, as recommended on the package. They did get fairly thick, so I did water it down a little, based on my personal tastes. They cooked up quickly on a cast iron griddle. Before I added a sugar free syrup, I some of it a taste with nothing else on it. The flavor is good and the texture is reminiscent of wheat flour pancakes, just thicker than I like. I preferred my pancakes to be almost crepe-like thin. But if I can eat these and keep my blood sugar in check, I can get accustomed to having thicker pancakes.Pour on the sugar free syrup and enjoy a stack of pancakes. These are the magic key to being able to eat pancakes on weekends and being able to enjoy them. Now I can bring those memories back again.

I’ve been eating these waffles for like 3 months straight and loving it. Combined with some Greek yogurt, blueberries, and a couple boiled eggs and I have a nutritious and high protein breakfast that makes me feel great. Super easy to make!

I think these are my favorite of the Birch Bender pancakes even though the texture can be weird. Maybe I add too much water? They are better than most GF pancakes. There really is no banana flavor I can detect. It's nice you only have to add water - so simple. We slice thin pieces of apple and add that to the top of them and cook it in for a change up.

Being dairy, gluten, and soy free, paleo options are an easy choice for us. This banana paleo pancake mix is super easy to prepare, made more than enough for our family of 7, and had a great but not overpowering banana flavor. The density was exactly what you’d want in a fluffy pancake with slightly crispy edges. My family loved them, and we will definitely be keeping several bags in our pantry at all times. These seriously may have been some of the best pancakes (gluten free or not) that we’ve ever eaten!

Wife loves it !Cooks easily and great tasting

I was very excited about this product but unfortunately ended up disappointed. First, preparing per directions the batter was so thick and sticky it was stuck to the bowl as well as the spoon. I sprayed with butter spray so I could flatten the batter down a bit and cooked. Secondly, the taste was bland, not much flavor, not very sweet at all and for the price I won't purchase again. Stuck with 3/4 of a bag I will try again adding some all-spice and cinnamon to enhance the flavor.

Makes a great gluten-free pancake!
