I didn’t think a proofing cloth was necessary when I started making baguettes — until I actually tried using one. Worked great and as described!
I ordered the x-large couche and the size is what I ordered. Not small at all. I am actually annoyed, because I read some reviews that commented it was small, and stupidly, I went a size up. I should have looked at the measurements on the cite. That's on me.The couche is well made and thick enough to separate and hold the dough in place. It came cleanly packed. I opened it, took it outside and shook it off. Didn't notice anything coming off, but why not. I've used it a few times, and I am happy with the product.I also want to note that the x-large was cheaper than other prices for smaller couches I found on Amazon. The price was the ultimate deciding factor. You'd think that the quality would be somewhat less, but it's not. It's made of really good quality and it will serve me well for many years.

Very nice size, sufficiently stiff or heavy for most uses
I don’t have baguette pans, not because they are too expensive but because my storage space is too limiting. I should have designed a larger kitchen but that’s a whole other saga. A couche is the perfect compromise between functionality and space. When you receive it you are tempted to wash it before use. Don’t unless you do it by hand lest you soften it o the point of lost utility. Then dry it by hanging over rod or the top of a shower door. Flour it liberally, fold it up, and put away until you use it. The two most common uses for me are draping over yet-to-be-baked bread or formed into side-by-side loops for raising baguettes. If you are making boules I suggest a banneton proofing basket made from a natural fiber and a cloth liner; plastic does not release well.
