This couche is exactly as described. It is firm enough to keep dough contained but soft enough to mold. Not tried it with baguettes yet, that's the main test. It's also good for simply covering a lot of dough. The dough scraper is excellent too. Just the right size and flexibility.

If you need a bakers couche You can’t go wrong with this product. However, I found that for baking my baguettes it is far easier, just placed the baguette directly into a baguette tray, instead of having to mess with the couche and then transfer the baguette to it a tray for baking

I don’t have baguette pans, not because they are too expensive but because my storage space is too limiting. I should have designed a larger kitchen but that’s a whole other saga. A couche is the perfect compromise between functionality and space. When you receive it you are tempted to wash it before use. Don’t unless you do it by hand lest you soften it o the point of lost utility. Then dry it by hanging over rod or the top of a shower door. Flour it liberally, fold it up, and put away until you use it. The two most common uses for me are draping over yet-to-be-baked bread or formed into side-by-side loops for raising baguettes. If you are making boules I suggest a banneton proofing basket made from a natural fiber and a cloth liner; plastic does not release well.

A simple tool that works perfectly. Fits nicely in a half sheet pan. Can't make real baguette without it.

I am NOT using these as a couche. I make my own bread and like to save the loaves covered in these cloths. This way, the bread is covered, and yet, it has air, keeping the crust crunchy. Every loaf or two, it gets washed in the machine, together with my kitchen towels (microfiber). Since two came in the package, there is always one extra clean one available. The dough mixers are SOLID! Goodness! They seem indestructible! Probably a while before I find some recipe that could use one. Nice to have though.

I bake bread and make fresh pasta. I was always scraping my counters after making a batch of either. So, I bought this. After sprinkling it with flour it was perfect. It holds whatever size folds you create to keep baguettes shaped, or keeps pasta dough from sticking to the counter. And, the price was right.

Had for a couple years, still going strong. It is a linen couche, what more do you want me to say?
