Q: will one sachet continue to make endless kefir batches? Are these the grains?

Hi The product is a freeze-dried starter for Kefir, so not the product called ''Kefir grains''. The product ''Kefir grains'' cannot be freeze-dried. It is very advisable to reculture as the quality is better and the time for recultivation significantly shorter. Q: does the jar or container need to be covered to allow air in or fully air sealed?

I make my kefir in the yogurt machine, when completely cooled I store it in plastic bottles (from bought kefir) then store in the fridge. To make the next time I store newly made kefir in ice cube trays in the freezer then just de -frost when required. Hope this is helpful.

Q: what other equipment do I need to make kefir milk with this?

You don't need any special equipment. Just a clean jar to store it in. You need to heat the milk you use first (I've done it on the stove and microwave - microwave seems to work better because the milk doesn't burn on the bottom of the pan), then mix in the sachet when it is cooled. Store in a warm place (airing cupboard or AGA?) for 36-48 hours while it sets. You can then use some of the starter culture to make your next batch. Good luck!
