Organic peanut butter doesn't contain creamery agents or other harmful anti-separation chemicals, thickening agents, etc. I was a little surprised at the separation after left sitting, yes, so I ground my own peanuts to make a comparison. I put the chunky peanut butter into an airtight jar and, left sitting, the exact same separation occurs. A simple stir before use fixes this. It's the same as shaking the orange juice or milk carton before pouring.A few of the other reviews have me puzzled. How could this delicious peanut butter not separate?Our choices are: Either get the chemical-laden version or get the clean, natural version.

So many healthy peanuts butters are so dry and have all that messy and hard to stir separated oils - this one is delightful. Just drippy deliciousness.

It's a very thick texture that is hardly spread on a piece of bread. I have to let it out for some minutes before applying it. (-Which I usually don't have time for.) The flavor is expected, but a little too much dry peanut flavor.
