Very well made
This knife is very well made and balanced, it has a very nice finish and is extremely sharp. You can tell they took their time to make this knife. It slices through meat like butter. Highly recommend

One of the best knives I've tested online
This is one of the best knives I've tested online and I've done dozens of knife tests here. I end up with a lot of mediocre knives masquerading in the appearance of good knives, but this one is legitimate in the quality of craftsmanship you get in this knife. Any company can stamp out a blade and laser etch some damascus lines onto it, it's much rarer to find actual san-mai folded forged steel blades. This one is stainless clad VG-10, one of my favorite kitchen knife steels. It's harder than typical Western/ European steels for knives, so it holds a sharper edge for longer, but it is more prone to damage if you are careless with your knives. For example, a Western Zwilling or Wusthof you can toss into a sink and it's usually fine, but if you do that with a good Japanese knife, it will likely chip or break. It's like how you wouldn't try wrapping a chain around a tree and pulling it out with a Ferrari but you can do it with a F250 pickup truck.It's extremely sharp out of the box, and easily passes the tomato test as well as carrot and potato, shaving translucently thin slices with ease. A lot of this has to do with the convex grind on the blade, which takes a lot of time and personal attention when making the knife. Instead of just having a straight V angle, the two sides convex down into a very narrow angle, so when you cut with this, it feels like you're using a razor blade. What this means also is that you will need to care for this knife more than with Western knives, honing it and not putting it through bones or anything that could chip it. But when you need to slice with it, it's almost as if the food is parting like silk.Performance aside, this is a gorgeous knife and it appears just as it does in the photos. It also comes in a really nice gift wooden gift box, making this an excellent gift for someone who wants a Japanese knife but can't justify the price of one. This knife feels like one that costs 2-3x as much in the craftsmanship.

Solid Introductory for Beginners Looking for their first Japanese Knife
This thing is SHARP - it's my first japanese knife and I've never owned a knife this sharp. It introduced me to the world of knives and knife sharpening - I highly recommend to anyone looking to own their first japanese knife.The only con is this thing RUSTS quick, so wash & dry quickly.

As a chef, I have very high requirements for knives. This kitchen knife won me over with its excellent performance. Sharp and durable, they make cooking more enjoyable. Horrible quality
I am extremely disappointed with the quality of this knife. Initially, it appeared to be well-made, but upon using it to cut a regular salmon fillet (not even one with tough skin), the blade developed dents and even bent. This level of performance is unacceptable for any knife, let alone one at this price point.The quality is far below expectations, making it unsuitable for basic kitchen tasks. I will be returning this product as it does not meet the standard it claims to deliver. I strongly recommend looking elsewhere for a reliable knife.

Best knife I own!...
...Because all my other knifes came from Ikea....But in all seriousness, this is a VERY nice knife. It is beautifully made, EXTREMELY sharp out of the box, cuts very well, balances well, and looks fantastic. I have not used it enough yet to sharpen it, so can't speak to how well it takes an edge. I have been meaning to lend it to a chef friend to get their opinion but haven't had the chance yet. I will definitely be updating this review when I do, as they are way more qualified than I!

Stainless steel knife that cuts and dices well but characteristics in listing are off

What's included:- 7" chef knife- Authenticity card- Cloth- User terms- Plastic sheathThe 7" chef knife by KAWAHIRO is well made and works very well for a variety of tasks however the listings features are incorrect and this may be the difference between choosing whether to purchase this knife or not.Let me immediately point out the irregularities between the actual knife and the listing description. You can get a summary of the differences in my video To begin with the length of the knife in the listing is 390mm which is incorrect. The actual length of the knife is approximately 320mm which is materially different than that which it is listed at. Furthermore, the height or distance from the bottom of the blade to the top of the handle is greater than the 47.5mm listed, coming in around 55-60mm.I also decided to weigh the knife and while the knife is well balanced in terms of weight, it is less than the noted 194grams. In fact, the knife is only 181grams.Finally, let me just touch on the actual blade where the cutting length is indeed 7" however it is impossible to verify the total length of the blade as part of the blade runs into the handle which masks the remaining length of the blade.As far as materials go this is a stainless steel blade, which will work well and should have a good useful life. The rated VG10 steel will mean that over time as I continue to use this knife, it will be something that I can have confidence in with respect to durability and edge retention. While there are perhaps combinations of metals that when forged together work better, I have been and will continue to use this knife on a daily basis so durability is particularly important to me.Added to the VG10 rating, the knife also has a Rockwell Hardness Scale score of 60 degrees which adds to my confidence, that while this knife will need to maintained, it is less prone to chips than perhaps other higher rated knifes. IN fact my ideal knife is around the 58 to 60 level so this works for me.The knife has a blade of 7" and is great for slicing and dicing in particular. The knife cuts through softer items without any issue and I have also used it to slice up chestnuts which can be quite difficult on a regular knife.There are of course some tradeoffs that come with a knife like this and those tradeoffs tend to come in both price and maintenance. This is a generally higher priced knife than others in its class, however, being strictly stainless steel, one will have to determine whether or not this knife and its exclusive use of stainless steel is in fact what is desired - and that will really depend on what you plan to use the knife for mainly.In addition to the premium to be paid, there are also some steps that need to be taken to maintain the knife including washing and cleaning the knife almost always immediately after using it, rather than having it sit in the sink and to be conscience of that it is you are cutting especially those food items that are quite acidic. You also want to keep this knife away from high heat sources to protect the integrity of the blade.As far as the handle's comfort goes, I find that the handle is ok for a rigid eight sided handle. It is smooth and there is virtually no texture but its thick enough to sit comfortably in hand and use with ease.There is also a sheath provided with the knife which I appreciate although I have seen similar knives with better quality sheaths for sure, and so perhaps at this price point, a more high quality sheath would have been expected.Overall, the knife does a good job as a daily usage knife in the kitchen. It remains sharp and holds the blade's integrity under normal use conditions. Yes I do always clean it and put it away immediately after using it, which can be a bit tedious but its the price to be paid for a knife like this.This knife should last for sometime and should continue to provide many well cut items in the future before needing to be occasionally sharpened.Cheers,

Basically a piece of functional fine art
This is a beautiful knife, right from the box it comes in down to the etching on the blade, everything about it screams "premium". Unboxing it is just layer after layer of joy - you take off the cardboard sleeve and there's a beautiful wooden box. You take the lid off the wooden box and the knife presents itself to you, housed in a plastic sheath that prevents you from cutting yourself. It includes a certificate of authenticity, along with instructions on how to maintain the blade and safety tips (including "don't lick the knife" - glad they told me). There's also a polishing cloth to keep it looking perfect. It is, without a doubt, the sharpest knife I've ever seen and is incredibly well-made. The balance is perfect, and it feels amazing in the hand. It's so nice that you kind of don't want to use it, but the reality is that this is a piece of fine craftsmanship that is meant to be used.Kawahiro makes a variety of different knives, and while this is their least expensive, it is still extremely nice. It is made of hand-forged steel (yes, like a sword), and weighs 171 grams (about 6 ounces). The handle is anti-slip (good idea on a knife this sharp), and is made from a nice red cinnamon wood. Japanese knives are known to keep an edge for a long time, with the biggest risk being breakage if you use it too aggressively. It's a tool that demands finesse, and is built in a way that encourages you to treat it with care.

Solid knife, a bit overpriced for the length
This product arrived the next day via Amazon Prime and was packaged in a remarkably nice gift box and shipped in a cardboard box.PROS-Simple, elegant design.-Excellent hand feel; this knife is well weighted and features a comfortable handle which is surprisingly not always the case and can easily make or break knife use for me.-Nice quality blade that cuts with ease.-This seller has a variety of knives from the same line for sale.-This would make an excellent gift' the quality is so that I would be happy to give or receive this item as a gift.-The box it comes in is rather nice.CONS-I think the asking price of $170 CAD is not completely unreasonable but given this is a 7 inch blade, I am not sure everyone would find this to be excellent value.-Quality knives should be washed by hand rather than placed in the dishwasher which can dull blades, rust divots, warp handle materials, etc. Optimally, this will require a whetstone for regular blade maintenance.
