Q: Does anyone know how long the blue (heat element) part is?

It's most of the length of the blue plastic part that wraps around the bucket. If it's not keeping your stuff hot enough just wrap some blankets around it.

Q: Why does it say 'up to eight days" ? Does the unit need a 'rest' after that?

What they are saying is "this is not a warmer". In other words, you GET your ferment to that temperature and this will KEEP it there for 8 days. They even tell you right under that, if you want to keep it there longer than 8 days you require an additional heat source (like a heating mat say).

Q: Can I wrap it around smaller jars; say one gallon?

It says not to use it on glass jars, but I have without an issues. I just keep it down around the bottom of the glass where the glass its at its thickest.
