Q: Could this be used to flavor homemade ice cream?

I think it would work. I put it in my cake icing and gives it a strong rum flavor.

The rum flavoring I have shows that is is water based. I have other Oetker brand flavorings and they are vegetable oil based. None of them list alcohol as a content.

Q: What is the best way to use this when cooking?

Use Dr. Oetker rum flavor to refine pastries and desserts. One vial is good to use for 500 g of flour or 0.5 liters of liquid. It can easily be used dropwise to get the desired flavor intensity.
