The Yaxell Tsuchimon Kiritsuke Knife is designed for all the tasks for which you'd use a chef's knife. It works extremely well with vegetables, julienne, dice, and more. The straight edge won't rock through cuts such as a traditional chef's knife. Yaxell Tsuchimon is also known as "beautiful wave line" with a hammered texture on the blade in Japanese. Constructed of Japanese VG10 superior stainless steel clad by high quality stainless steel from both sides. The handle is made of black resin and linen Canvas Micarta with two stainless steel rivets. The canvas material is dyed black and brilliantly polished to last for decades. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

Smooth as butter
When I first got the knife I was just playing around with an onion the first cut sold me on the knife. It was like the onion was not there. It fell through the onion. No pressure just guidance. That was 2 weeks ago.It’s replaced my Henckels four star santoku as my go to knife.
