I don’t understand this and can’t find a video to help. When you use the key, does the cable release? How do I get in it easily then close it back?

It's working like any door lock with a key. but this lock is with long cable, for example if it is locked 🔐 you cannot release the cable, once you turn right the key 🔑 now you can release the cable from the head and you can open the door. If you want to lock the door with the lock 🔐 you need to put the lock cable into the other part the head of the lock and the turn the key 🔑 left to complete the process of locking. I hop it's clear now.

Will this work on a stainless steel fridge?

It does. And actually pretty well. Remember to wipe it off clean and I suggest using alcohol as you would like putting on a screen cover.
