Terrific Knife!
I purchased one for trimming brisket and pork butts, but it is so much more versatile. It stays sharp longer than any other knife I have tried. Since that original purchase, I have purchased two for gifts and another for myself. Highly recommend!

Nice Knife, Very Sharp, Good Price
I use this to trim up briskets and it works great. Super sharp and holds an edge well. Blade has enough flexibility to get around obstacles without being limp. Could be used for filleting fish as well. Good price for the quality.

Flex blade still pretty stiff in a good way
Spent too much time imagining the differences between a flexible vs semi-flex/semi-stiff blade. The flexible one is still firm and excited to debone meats after spending decades improvising with the wrong knives.
