I think they want to know how the PRODUCER keeps it MOLD-FREE during the production process, NOT how to store it, once its been bought. They want to know how you make it, so they can decide if they want to buy cascara from you(producer/seller).

Is there a version that is steamed and dried, which protect most of its flavors & antioxidants from the fermentation process like Japanese green tea?

This product is not steamed. It is washed in a water bath and then dried in the sun. It is proven to be very flavorful and contains antioxidants. I hope that answers your question.

Can the berries be ground into a powder using a vitamix?

I'm sure they can be ground but don't know how powerery they would become. Not sure that powder would be the best form to brew them. They are more similar to tea leaf brewing.
